Lobster yee mein (1) leftovers, reimagined:
Remove the lobster meat from their shells.
Break down the heads, bodies and shells, and boil for a coupla hours or until you've extracted every delicious drop; strain and return broth to the pot, keep simmering on low.
Meanwhile, soak a few dried shiitake mushrooms and a dried scallop; when reconstituted, add the soaking liquid to the lobster broth. Simmer for about 30 minutes.
Add some fishcakes, sliced mushrooms, scallop, leftover toong choy, and the lobster meat, and bring to a boil. (2) Split the yee mein into bowls, nuke for about 30 seconds. (3) Ladle the broth and goodies you've added into the bowls.
