This weeks meal prep was done on Monday because I worked the weekend. What started as some peppers, carrots, and onions, turned into a delicious couscous dish. ❤️ I used a Moroccan recipe that I found. Who else loves couscous?
I have this for lunch so much, but it tastes amazing & it’s so quick and easy to make✨
•half an onion
•salt & pepper
Just put some olive oil in a pan, add mushrooms and onions (can also add a chopped garlic glove for extra flavour), add balsamic vinegar once the mushrooms have soaked up oil & shrunk. Then just place on top of your toast & season with salt and pepper 🤤 (You can add some butter to toast but I like it without)
You could have this for breakfast too, but I prefer to have it for lunch as I like something sweet for breakfast 🍓
