I Biscotti Morbidi all’Arancia , sono una ricetta creata da mia madre, che ama gli agrumi ed i dolci agli agrumi. 3 things. 1. If you follow mymasalabox and her stories and have not craved or dreamed a steaming hot bowl of kadhi for Sunday lunch, you have better self-control than I have. This was the second weekend in a row I made kadhi just because I wanted to stop drooling over her kadhi stories. 2. I take my kadhi very seriously. I like it sour, simmered for hours and and not too thick. Basically, only the way my mom makes it. Besan, sour curd, salt and literally a pinch of turmeric powder are whisked together with enough water, brought to a boil and then simmered on low heat for at least an hour or more if you can. Sometime mid-way, heat a teaspoon of ghee in a small pan and once it is hot add rai, hing, saunf and dana methi and let the rai seeds splutter. Then add lots of fresh green chilies, freshly grated ginger and curry leaves. Pour this tempering over the simmering mixture and let it cook for remaining time. Once done, serve with fresh coriander leaves. Kadhi tastes even better the next day. I would say this is the Rajasthani version of kadhi but I am never sure and because there are so many versions of kadhi in Rajasthan. So I call this one - my mom's version. Apart from this, I love love love the Jodhpuri version of kadhi which is much thinner in consistency, more sour and it is tempered with a ton of ghee and red chilli powder in addition to everything else I mentioned above. 3. This one was made in Instant Pot and it was okay. Just okay. Now don't get me wrong, IP is the new super-hero and it can do anything but it is still human and has it limits. Or maybe its just me being extra picky. Will I make kadhi again in IP? Maybe. Hoy: un mix de pastas con una salsa de tomate y pollo...Una combinación perfecta!! Un plato que te puede llevar a la mismísima Italia! Sal y aceite a gusto. Para la salsa: 1 botella de salsa de tomate de 1lt. 2 pechugas de pollo. 2 cebollas grandes. 2 caldos de carne. Pimienta, sal, pimienta, pimentón, orégano, todo a gusto. Pasta: Poner a fuego fuerte una olla con agua, sal y aceite. Cuando esté hirviendo agregué la pasta aproximadamente 8 minutos, aunque es preferible chequear el nivel de cocción cada tanto hasta que esté al dente, luego colar los fideos y agregarles agua bien fría para terminar con la cocción y reservar. Salsa: Pelar las cebollas y cortarlas bien pequeñas, luego cortar las pechugas en cubitos medianos. A continuación poner a fuego fuerte una olla con aceite y rehogar las cebollas, agregarle los caldos de pollo y los condimentos, luego agregar los cubitos de pollo y dejar en fuego medio hasta que el pollo esté totalmente cocinado. A continuación a la olla agregar la salsa, una pocillo de agua y una cucharadita de azúcar y sal a gusto y dejarla 10 minutos aprox, luego apagarla. Preparación: Una vez que esté lista la salsa en una sartén al fuego medio, poner un chorrito de aceite y una vez que esté este caliente agregar nuestra pasta, rápidamente agregar una porción de la salsa y dejarla 2 minutos a fuego fuerte, revolviendo constantemente para que no se pegue. Una vez pasado los 2 minutos, emplatar y servir. Y decorar con un poco de perejil picado bien fino.
