💫 Easy dinner from cupboard and freezer staples 💫
A simple dinner using some of my staple cupboard/freezer foods:
Tonight’s dinner started from half a carton of passata that needed using up, I was winging it but it was delicious!
Roast at 200C:
Half a sweet potato, cut into small cubes
After 20 minutes - Add one tin of chickpeas and mixed peppers
Roast for another 20 minutes
Add passata, mix all together, roast for another 20 minutes
Optional flavourings, to taste:
Salt, garlic salt, paprika, cayenne pepper, nutritional yeast
Cooed when the sweet potato chunks are fully cooked.
Serve with rice and vegetables 🥦
Super simple and lazy dinner, but oh so delicious and nutritious!
This is completely from the freezer/cupboard other than the seeet potato, so you can skip if you don’t have! Super adjustable depending on what foods you have, as long as you have beans, rice and tomatoes you’re sorted!
