P O L Y Surry Hills hasn’t been opened long but as predicted this gem of a wine bar is producing delicious fare. This wine bar is the creation of Chef Mat Lindsay of ester_au . We spent a long leisurely lunch here with friends on Sunday on a lovely round table near the kitchen. Lucky me who loves to watch them cook. The wines are less traditional so don’t come thinking your entering a traditional French wine bar. Wines more unusual and tend towards organic and biodynamic with minimal intervention. We loved our choice. “Granite” 2017 Pinot Noir from Upper Yarra Valley • Sesame dip for the dense and warm homemade bread • Scallop Special....to busy enjoying it to remember what it was exactly 😂 • Comté (a perfect swirl!)

What's cooking Wednesday?⠀ Patatas Bravas!⠀ This is a lovely Spanish dish with a bit of bite. Very easy to make and can either be served as a Tapas dish or as part of a meal.⠀ Patatas bravas should be lovely and crisp and topped with a spicy tomato sauce.⠀ ⠀ Ingredients⠀ For the salsa brava⠀ 3 tbsp olive oil⠀ 2 cloves garlic crushed⠀ 1 small chopped onion⠀ 1 tsp pimentón picante (hot Spanish smoked paprika), plus extra for serving⠀ 1 tbsp red wine vinegar⠀ 125ml/4fl oz tinned chopped tomatoes⠀ ⠀ For the potatoes⠀ 1.5kg/3lb 5oz floury potatoes, such as Maris Piper or King Edwards, peeled⠀ 180ml/6fl oz olive oil, for shallow frying⠀ salt⠀ Chopped Parsley⠀ ⠀ Method⠀ For the salsa brava, heat the olive oil over a low heat, add the chopped onion and cook over a low heat for 10 mins with the lid on. Add the garlic and cook for a further 5 mins with the lid on. Add the pimentón and vinegar and mix together well. Stir in the tinned tomatoes and season to taste with salt and freshly ground black pepper . Cook over a moderate heat for a further 10 minutes. Place the mixture into a blender and blend until smooth.⠀ ⠀ ⠀ Cut the potatoes into small, even-sized pieces. Drop into a large pan of well-salted water and cook for 6-7 minutes, or until just tender. Drain well.⠀ ⠀ Heat the olive oil in two large, non-stick frying pans, and shallow-fry in a single layer for 10–12 minutes, turning them regularly, until crisp, golden-brown all over.⠀ ⠀ Spoon the potatoes into one large serving plate sprinkle with some chopped parsley and drizzle over the sauce. Сушеные яблоки в духовке – общие принципы приготовления: . ✔️ Для сушки подходят все сорта яблок без исключения. Но когда выбор большой, то лучше отдать предпочтение фруктам с небольшой семенной коробочкой и тонкой кожицей. На вкус яблоки должны быть кисло-сладкими и ароматными. . ✔️ Перед сушкой фрукты моют и просушивают. Червоточины и побитости удаляют. Яблоки разрезаются на четвертинки, вырезается сердцевина. Фрукты режутся на ломтики толщиной около полсантиметра (я делала чуть меньше и специально очистила их от кожуры). . ✔️ Яблоки рассыпаются одним слоем на противень. Его следует устелить пекарской бумагой. ~~~ Самый простой способ - Сушеные яблоки в духовке электрической 🍏👌! . Ингредиенты: • яблочные плоды. . Способ приготовления: Помоем яблоки под краном. Разрежем пополам и удалим при помощи ножа сердцевину. Нарежем на дольки и разместим на противне. Поставим его в духовку. Включим режимы верхнего и нижнего нагрева и вентилятор. Выставим температуру 50 градусов. Сушим яблоки часов 12. Периодически проверяем их состояние, перемешивая аккуратно. Готовый продукт храним в стеклянной герметичной банке, чтобы не допустить попадания влаги. . Моя дочка уже с удовольствием оценила эту вкусняшку 😇! We speak for many when we say we are incredibly excited for what windowsestate is doing. Jo and Chris is the lovely couple behind the estate and Chris actually takes care of all the vines in the estate; the Fume Blanc 2016 is a must-have. They let the land and grapes speak for themselves, giving anyone a taste of the diverse terroir in their little section of Margaret River. Their wines are heading down to Singapore next month, and they have plans to do more dinner collaborations in the near future.
