Chicken omelette with parsley and spring onions, sweet peppers cauliflower rice, black beans and salad. Cauliflower rice is very simple to cook, specially if you prepare in advance and freeze like I do.
Start by pulsing cauliflower florets in a food processor until they've broken down into tiny granules. Make the whole cauliflower and separate in little frozen bags, stock up in the freezer and whenever you need they're there ready to use. So, crab a bag, don't even worry about defrosting, place a little bit of olive oil in a fry pan with smashed garlic and diced sweet peppers. Let it fry for about 3 to 5 minutes, careful with the garlic, don't let it burn. Add the cauliflower and fry for another 5/7 minutes or until it's golden brown and it's ready. You will have a delicious and light substitute of rice to eat with no guilt.
