Though Alberta contributes the most to Canada's overall honey production, Ontario currently has the largest number of beekeepers. While honey production varies year-to-year, Canada produces over 90 million pounds of honey yearly.
Like fine wine, there is an array of flavours depending on the flowers and the region of origin. The nectar that is gathered by the bees, stored and matured in the hive, and processed by the beekeeper gives each honey its specific flavours, strength or mildness, colour and consistency.
